Chef de Partie - Culinary Operations Supervisor

About the role

Cala Restaurant is looking for an experienced Chef de Partie to oversee and manage a key section of its kitchen in Karachi. The role leads a team of about 10 kitchen staff, including commis chefs and assistants, and ensures meals are prepared and cooked efficiently while keeping impeccable hygiene and safety.

Key responsibilities

• Manage and supervise the assigned kitchen section so that operations run smoothly and efficiently.
• Prepare, cook and present dishes according to recipes, quality standards and presentation guidelines, with consistent taste, portion sizes and food quality.
• Maintain high standards of food safety, cleanliness and kitchen hygiene.
• Monitor stock levels, control ingredients and minimise food waste; store, label and rotate food using the FIFO principle.
• Coordinate with the Head Chef, Sous Chef and other kitchen team members for timely preparation and service.
• Supervise and guide commis chefs and kitchen assistants, and train and mentor junior staff.
• Keep workstations and equipment clean, safe and in good condition, and follow daily preparation plans and mise en place schedules.
• Assist with menu development, improve kitchen workflows and keep accurate stock and inventory records.
• Implement and maintain Food Safety Management Systems and HACCP protocols, including hazard analysis and risk assessment.
• Work flexible hours, including weekends and public holidays.

Required profile

• At least five years of professional culinary experience.
• Strong cooking skills and detailed knowledge of food safety protocols.
• Ability to arrange and present dishes to the highest standards.
• Flexibility to work shifts, including weekends and public holidays.
