Head Chef – Pakistani Cuisine Specialist

About the role

We are looking for an experienced and passionate Head Chef to lead our kitchen team and deliver authentic Pakistani regional flavors. The role focuses on traditional Handi and Karahi cooking, house‑made spice blending, and high‑volume kitchen operations.

Key responsibilities

• Prepare authentic Pakistani Handi and Karahi dishes such as Chicken/Mutton Handi, Dum Pukht, Shinwari/Peshawari Karahi, Nihari, Haleem, and Dum Biryani using traditional slow‑cooking techniques.
• Lead, train, and supervise kitchen staff including line cooks, prep cooks, and tandoor chefs to ensure efficient service.
• Create and standardize gravy bases, house masala blends, and marinades for consistent flavor and presentation.
• Inspect every dish before service for authentic taste, correct temperature, portioning, and presentation.
• Manage inventory, order raw ingredients and authentic spices, and control food waste to stay within budget.
• Enforce strict food safety, hygiene, and kitchen sanitation standards at all times.

Required profile

• Minimum 5 years of culinary experience as a Head Chef or Senior Sous Chef specializing in authentic Pakistani cuisine.
• Proven mastery of Handi slow‑cooking (dum) and care of clay and copper vessels.
• Deep knowledge of Lahori, Peshawari, Karachi, and Punjabi flavor profiles and hand‑ground spice mixes.
• Fluent in Urdu and/or Punjabi; English proficiency is a plus.
