Production Manager – Bakery

About the role

The Production Manager plans, coordinates and leads bakery production to meet wholesale and retail demand. The role covers scheduling, quality control, inventory and cost control, food safety and team leadership.

Key responsibilities

• Plan and coordinate daily baking schedules, mix sheets and prep workflows to meet wholesale or retail demand.
• Monitor recipes, baking parameters and finished goods to ensure taste, weight, texture and appearance meet high standards.
• Manage raw ingredient stock, ordering and supplier coordination, and monitor production costs to reduce waste.
• Enforce health, safety and hygiene regulations such as HACCP or local food handler standards across the floor and equipment.
• Hire, train, schedule, mentor and evaluate bakers, prep cooks and line supervisors.
• Run, troubleshoot and maintain mixers, proofers, ovens and other machinery.

Required profile

• Minimum 10 years in food or bakery production management, with hands-on baking experience and relevant qualification as a baker.
• Strong organisational leadership, problem-solving and basic financial acumen.
• Good communication with floor bakers, maintenance, sales/marketing, distribution and other stakeholders.

Required skills

• Computer literacy including production management software such as SAP.
• Knowledge of industrial bakery equipment, dough processing, baking temperatures, ingredient functionality and sanitation protocols.
• Food safety and compliance with local health, hygiene and safety standards.
• Inventory control of raw materials, packing materials and finished goods, and cost tracking.
